Lemon Bread

Can you believe Easter is around the corner? Time sure flies when you are having fun! :)
I am not sure what my Easter menu will be yet, but I know for sure that this delicious lemon bread will be part of it. 

Ingredients:
2 eggs
2/3 c. evaporated milk
1/3 c. vegetable oil
1 1/2 tsp grated lemon peel (I love lemon, so I do a whole lemon)
1 1/2 c. flour
1 c. sugar
1 tsp. baking powder


Preheat oven 350. Grease and flour loaf pan. 
Combine flour, sugar and baking powder in a large bowl. 
Beat eggs, evaporated milk, oil and lemon zest together. 
Pour egg mix into flour mix to just combine.
Bake 55 to 60 minutes. When you take it out of the oven, poke holes all over and drizzle lemon syrup over the bread. 

Lemon Syrup:
1/3 c. sugar
1/4 c. lemon juice ( I use the juice of a whole lemon)
Cook over medium heat stirring constantly until sugar is dissolved and light syrup  forms, about 5 minutes. 

It is really quick, easy and delicious!
Look who is patiently waiting for mommy to finish taking pictures of the lemon bread to have a big slice!!
